Spicy Wings with Blue Cheese Sauce

Ingredients

  • ¼ cup (60ml) maple syrup
  • 2 tbs tomato sauce
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion salt
  • 1kg Coles RSPCA Approved Australian Chicken Wings
Blue cheese sauce
  • 150g soft blue cheese
  • ¼ cup (75g) mayonnaise
  • ¼ cup (60ml) buttermilk
  • ¼ cup (60g) sour cream
  • 2 tbs finely chopped chives
  • 1 tbs finely chopped dill

Method

  1. Preheat oven to 200°C. Line a roasting pan with baking paper. Combine the maple syrup, tomato sauce, paprika, cumin, oregano and onion salt in a large bowl. Add the chicken and toss to combine.
  2. Arrange the chicken mixture in a single layer in the lined pan. Bake, turning occasionally, for 40-45 mins or until the chicken is golden brown and cooked through.
  3. Meanwhile, to make the blue cheese sauce, place the cheese, mayonnaise, buttermilk and sour cream in a food processor and process until smooth. Transfer the mixture to a serving bowl. Stir in the chive and dill. Season.
  4. Arrange chicken on a serving platter and serve with the blue cheese sauce.

SERVE WITH chopped chives and dill sprigs
