Prawn Tacos with Salsa Verde

Ingredients

  • 8 Garlic Prawn Skewers made with Aussie Prawns Thawed
  • ½ cup (130ml) Coles Mexico Peppers Salsa Verde
  • 12 small flour tortillas
  • 350g pkt Coles Broccoslaw Kit
  • 1 ripe avocado, stoned, peeled, mashed

Method

  1. Heat a barbecue grill or chargrill on medium-high. Drizzle the prawns with half the salsa verde. Cook the prawns on the grill for 2 mins each side or until lightly charred and cooked through. Transfer to a plate.
  2. Spray tortillas with olive oil spray. Cook the tortillas on grill for 1-2 mins each side or until lightly charred but still soft. Divide among serving plates.
  3. Place salad mix from the kit in a large bowl. Add the cranberries and half the dressing from the kit. Toss to combine.
  4. Remove the prawns from skewers. Divide the avocado, salad mixture and prawns among tortillas. Drizzle with the remaining salsa verde and dressing from kit. Season. Serve immediately.
