  Cocoa Brownies with Black Chia and Pumpkin Seeds

Ingredients

  • ¾ cup Wellness Road Australian Almond Flour
  • ½ cup Wellness Road Spelt Organic Wholemeal Flour
  • ¼ cup Wellness Road Organic Cacao Powder, sifted
  • 1 tablespoon Wellness Road Organic Black Chia Seeds
  • ¼ cup Wellness Road Pumpkin Seeds, plus extra to garnish
  • ¼ teaspoon sea salt
  • 150g dark chocolate (70% cocoa solids), roughly chopped
  • 3 tablespoons extra virgin olive oil
  • ¼ cup honey
  • ½ cup plain Greek yoghurt
  • 1 teaspoon pure vanilla extract
  • 3 eggs

Method

  1. Preheat oven to 180c. Grease and line a 20cm x 20cm baking pan.
  2. Place flour, cacao powder, chia seeds, pumpkin seeds and salt in a small bowl. Mix to combine.
  3. In a separate medium sized bowl, combine chocolate with oil. Microwave in short bursts until melted and smooth.
  4. Add honey, yoghurt and vanilla to the melted chocolate mix. Stir to combine. Add eggs one at a time until all have been mixed in well.
  5. Add dry mix and stir until just combined. Pour batter into the prepared pan. Top with a sprinkle of pumpkin seeds and bake for 20 minutes. Store in an airtight container.
