 Organic Black Rice Noodles with Chia Buddha Bowls

Ingredients

  • 550g cherry tomatoes, on the vine
  • 2 yellow capsicums, trimmed, seeded and thickly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 pack (225g) Wellness Road Organic Black Rice Noodles with Chia
  • 210g bocconcini, drained and torn into thirds
  • 1 bunch fresh basil
Dressing
  • ½ cup extra virgin olive oil
  • Juice of 1 lemon
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Method

  1. Cut vine tomatoes into 4 equal portions. Add capsicum and coat with olive oil. Place tomatoes on a lined baking tray and bake at 200c for 10 minutes or until skins burst and tomatoes have warmed through. Meanwhile, grill the capsicum until tender.
  2. Cook pasta per packet instructions. While the pasta is cooking, make the dressing by placing all of the ingredients into a small bowl and whisking to emulsify.
  3. To assemble, divide each ingredient into 4 separate serving bowls. Top with a scattering of basil leaves and a drizzle of dressing. Serve warm.
