Easy Meatball Subs

Ingredients

  • 560g pkt Coles Australian Beef & Pork Meatballs
  • 400g can diced tomatoes
  • 4 Coles Bakery Hot Dog Rolls, split
  • 120g pkt Coles Australian Baby Rocket
  • ½ cup (60g) coarsely grated tasty cheddar

Method

  1. Heat a large non-stick frying pan over high heat. Add the meatballs and cook, turning, for 8 mins or until brown all over and cooked through.
  2. Add the tomato and bring to a simmer. Cook, stirring occasionally, for 5 mins or until sauce thickens. Season.
  3. Divide the rolls among serving plates. Divide the rocket among the rolls. Top with the meatballs and sauce. Sprinkle with the cheddar.
