Prosciutto Chicken with Spinach & Kale

Ingredients

  • 2 x 360g Coles Made Easy Prosciutto Wrapped Chicken Breasts with Mushroom Butter
  • 300g Coles Australian Baby Spinach & Kale
  • 2 tbs extra virgin olive oil
  • 2 tbs lemon juice
  • Steamed green beans, to serve

Method

  1. Cook the chicken and heat the mushroom butter following packet directions. Keep warm.
  2. Combine the salad leaves, oil and lemon juice in a large bowl. Season.
  3. Drizzle the chicken with mushroom butter. Serve with the salad and beans.

Serve with: lemon wedges
