  • 2 packets Lyn & Sal's Chocolate Macadamia Brownie Cookies
  • 250g Coles White Cooking Chocolate
  • 200ml creme fraiche
  • 1 tbs brown sugar
  • 1/4 tsp salt

 

Method

  1. To make the caramel cream filling, place the white chocolate, crème fraîche, sugar and salt in a heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water). Stir until the chocolate melts and mixture is smooth. Remove from heat. Place in the fridge for 1 hour to chill. Use an electric mixer to whisk the chocolate mixture until light and fluffy.
  2. Spread bases of half the cookies with the caramel cream filling. Top with the remaining cookies.
