In fact, 96% of our fresh produce is Australian sourced*. So what about the other 4%? Well sometimes we simply have to import it from overseas. For example, we do this when:

Des and Paula Chapman have been farming in Gumlu, Queensland for over 35 years. Their farm, Rocky Ponds Produce, has been a direct supplier to Coles for more than 15 years, supplying quality produce including capsicums, pumpkins, honeydew melons, rockmelons and more.
As you can imagine, it’s a big operation. And thanks to Coles, in July 2016 the fruit and vegetable farm received a $400,000 grant from the Coles Nurture Fund to install a state-of-the-art nursery, enhancing productivity by up to 20%.
Coles launched the $50 million Nurture Fund in April 2015 to help small businesses innovate and grow. Since then, we have offered more than $19 million in grants or interest-free loans to help fund the development of new market-leading products, technologies and processes.
For Rocky Ponds Produce this nursery includes energy efficient motors and fully computerised irrigation and fertigation systems. As part of this, electronic probes in the soil monitor soil health and the team can control specifications like water and fertiliser allowing better control of fruit size and sweetness. ‘New technology is something we’re really passionate about because it’s beneficial for the whole industry’, says Des, ‘this is the future of farming.’
Fresh Select is one of our major suppliers of quality Aussie produce, ranging from iceberg lettuce to cauliflower.
With farms across four growing regions in Victoria, South Australia, Western Australia and Queensland, Fresh Select ensures premium quality products are grown as local as possible.
A supplier with strong grower relationships and a commitment to bringing exciting innovation to Coles, Fresh Select in conjunction with the Samwell family located in the Adelaide Hills, helped Coles launch Kalettes in 2017. A hybrid between kale and brussels sprouts, look out for this product in store during the winter months.

1: Take your time on the meringue
“Beat the meringue on medium speed so you don’t overwhip it – if you beat on high, the mixture will overheat and the air bubbles will pop. Pinch a little meringue mixture to test – if you feel any grains of sugar, keep beating until smooth.”
2: Cook the custard in the microwave
“My microwave custard is failsafe. On the stove the chances of it going lumpy are really high. This way, if you forget it nothing happens and it never catches on the pan. Even if it starts to look overcooked on the edges, just whisk like mad and it will be perfect.”
3: Check the consistency
“Don’t worry if the cooked custard looks too runny – it thickens up a lot when you add the chocolate. If you need your custard to hold its shape longer, chill it until you’re ready to serve. If it’s too thick, whisk in a little milk to reach the texture you want.”
4: Discs look flat? Don't worry, just go for it
“Don’t worry if the meringue looks a little deflated. The joy of this layered pavlova is it doesn’t matter if the meringue turns out light and fluffy, or dense and chewy – it’s delicious either way and still stacks up beautifully.”
