BEEF OYSTER BLADE CASSEROLE With mushrooms and potato PREPARATION TIME: 20 minutes COOKING TIME: 75 minutes SERVES: 4 RECIPE INGREDIENTS 1 pack Coles Oyster Blade 500g, diced ¼ cup plain flour 4 tbsp Olive oil 1 medium brown onion, diced 1 celery stick, diced 1 medium carrot, chopped finely 3 cloves garlic, minced 250g button mushrooms, quartered 1 sprig rosemary, chopped finely 1 cup red wine (or water) 500ml beef stock 3 small potatoes, peeled and quartered HOW TO PREPARE 1. In a large bowl toss the diced beef with the flour and a generous pinch of salt and pepper. 2. Heat 2 tbsp olive oil in a heavy based saucepan over a high heat. 3. When the oil is hot add the beef and brown, turning frequently for 4 to 5minutes then set to one side on a plate. 4. Carefully add remaining oil to the hot pan and add all vegetables except the potatoes. 5. Cook the vegetables stirring frequently for a few minutes until onion has softened and is translucent. 6. Add the beef back to the pan along with the red wine (or water). 7. Cook until the wine has reduced (approximately 2 to 3minutes) then add the beef stock and bring the pan to a gentle simmer. 8. After 15 minutes add the potato. 9. Cover the pot with a lid and cook for a further 50 minutes stirring occasionally or until meat is tender. Chefs tip: you can try different spices in the flour such as paprika or curry powder.
