Tostitos Chicken Carnitas Platter

  • 1kg chicken thigh fillets
  • 1 brown onion, cut into thin wedges
  • ¼ cup (60ml) orange juice
  • 1 lime, zested
  • ¼ cup (60ml) lime juice
  • 2 garlic cloves, crushed
  • 1 jalapeño, thinly sliced (optional)
  • 2 x 250g pkts Mexican-style microwavable rice
  • 1 avocado, stoned, peeled, mashed
  • 2 tomatoes, chopped
  • 1 red onion, chopped
  • 400g can red kidney beans, rinsed, drained
  • Sour cream, to serve
  • Coriander leaves, to serve
  • 165g pkt Tostitos Restaurant Style Smoked
  • Chipotle & Sour Cream Tortilla Chips
  • Lime wedges, to serve
  • Sliced jalapeño, extra, to serve (optional)

  1. Step 1

    Combine chicken, brown onion, orange juice, lime zest, lime juice, garlic and chilli, if using, in an ovenproof dish and toss to combine. Season. Cover and place in the fridge for 2 hours or overnight to develop the flavours.

  2. Step 2

    Preheat oven to 200°C. Uncover chicken mixture and bake for 30 mins or until chicken is cooked through. Remove from the oven and use 2 forks to shred the chicken.

  3. Step 3

    Preheat grill on high. Cook the chicken under the grill, tossing occasionally, for 10 mins or until golden brown.

  4. Step 4

    Heat the rice following packet directions. Arrange the rice on a large serving platter and top with the chicken mixture, avocado, tomato, red onion, kidney beans, sour cream and coriander.

Serve with the Tostitos Restaurant Style chips, lime wedges and extra chilli, if using.
