Adam Luttrell's spaghetti bolognaise

Ingredients

  • 375g spaghetti
  • 1 tsp olive oil
  • 1 brown onion, finely chopped
  • 1 tbs minced garlic
  • 500g Coles Australian 3 Star Beef Mince
  • 1/2 cup (140g) tomato paste
  • 1 tsp dried Italian herbs
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • 1 tsp dried basil
  • 1 tsp chicken stock powder
  • Basil leaves, to serve
  • Finely grated parmesan

Method

  1. Step 1

    Cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Refresh under cold water. Drain well.
  2. Step 2

    Meanwhile, heat the oil in a large deep frying pan over medium-high heat. Add the onion and garlic. Cook, stirring, for 3 mins or until the onion softens. Add the mince and cook, stirring with a wooden spoon to break up lumps, for 5 mins or until browned.
  3. Step 3

    Stir in the tomato paste and 2 cups (500ml) water. Stir in the Italian herbs, onion powder, garlic powder, rosemary and dried basil. Cook, stirring, for 10 mins or until the mixture thickens. Stir in the stock powder. Season.
  4. Step 4

    Divide pasta among serving plates. Spoon over the mince mixture and sprinkle with basil leaves and parmesan.
