Method

  1. Step 1

Place burgers and ginger in a large bowl. Use your hands to mix until well combined. Place 1 pastry sheet on a clean work surface. Place 2 tbs burger mixture diagonally across 1 corner of the wrapper. Brush opposite corner with a little water. Fold in the sides and roll up to enclose filling. Repeat with remaining pastry sheets and burger mixture.

  2. Step 2

Preheat air fryer to 200°C. Spray spring rolls with olive oil spray and cook in air fryer, turning halfway through cooking, for 15 mins or until golden and cooked through (Alternatively, bake on a lined baking tray at 200°C for 15 mins or until golden and cooked through).

  3. Step 3

Meanwhile, cook the vermicelli noodles following packet directions. Refresh under cold water. Drain well.

  4. Step 4

Reserve the dressing from salad kit. Combine salad and crunchy noodles from the kit in a bowl. Divide vermicelli noodles and salad mixture among serving bowls. Top with spring rolls and drizzle with reserved dressing to serve.
