Quick and easy, these tasty air fryer turkey meatballs are a great dinner option. Served with brown rice and fennel salad, they make a wholesome meal the entire family will love.

Air-fryer turkey meatballs with fennel salad

Ingredients

  • 500g turkey mince
  • 2 tbs chopped dill
  • 2 tsp finely grated lemon rind
  • 2 corn cobs, husks and silk removed
  • 250g pkt microwavable brown rice
  • 1 (about 400g) fennel, trimmed, thinly sliced, fronds reserved
  • 2 Lebanese cucumbers, halved, thinly sliced
  • 4 spring onions, thinly sliced
  • 3 (about 100g) radishes, thinly sliced
  • 1/2 cup mint leaves
  • 1/3 cup (95g) Coles Light Greek-Style Yoghurt
  • 1/4 cup (60ml) lemon juice

Method

  1. Step 1

    Preheat air fryer to 200°C. Combine the mince, dill and lemon rind in a bowl. Divide evenly into 16 portions and roll into balls. Place in the basket of an air fryer and cook for 10-15 mins or until browned and cooked through. (Alternatively, bake meatballs on a lined tray in the oven at 200°C for 20-25 mins or until browned and cooked through.)
  2. Step 2

    Meanwhile, heat a barbecue grill or chargrill on high. Cook corn on grill, turning occasionally, for 8 mins or until charred. Set aside to cool slightly. Use a small serrated knife to cut down the side of the corn to release the kernels.
  3. Step 3

    Heat the rice following packet directions. Combine the corn, fennel, cucumber, spring onion, radish and mint in a large bowl. Combine the yoghurt and lemon juice in a small jug or bowl. Drizzle over the fennel salad and toss to coat.
  4. Step 4

    Divide the rice and fennel salad among serving bowls. Top with the meatballs and sprinkle with 2 tbs reserved fennel fronds.
