Alex's super easy potato salad


  • 1kg Coles Baby White Potatoes, halved
  • 300g middle bacon rashers, chopped
  • 2/3 cup (200g) whole-egg mayonnaise
  • 1 tbs lemon juice
  • 1 tbs wholegrain mustard
  • 120g pkt Coles Australian Baby Spinach
  • 6 hard-boiled Coles Australian Free Range Eggs, thickly sliced
  • Chopped chives, to serve

  1. Step 1

    Cook potatoes in a steamer over a saucepan of simmering water for 10-12 mins or until tender. Set aside to cool slightly.

  2. Step 2

    Meanwhile, cook bacon in a frying pan over medium heat for 10 mins or until crisp. Transfer to a plate lined with paper towel.

  3. Step 3

    Whisk the mayonnaise, lemon juice and mustard in a small bowl. Season.

  4. Step 4

    Arrange potato, spinach, egg and bacon on a serving platter. Drizzle with dressing and sprinkle with chives.
