Ingredients

  • 4 sheets ready-rolled shortcrust pastry, just thawed
  • 6 Coles Brand Australian Free Range Eggs, lightly whisked
  • ½ cup (125ml) cream
  • 100g Coles Deli Antipasto Tuscan mix, coarsely chopped
  • ¼ cup finely shredded basil
  • 50g goat’s cheese, crumbled

Method

  1. Step 1

    Preheat oven to 200°C. Grease two 12-hole, 1/3 cup (80ml) muffin pans. Use a 7.5cm round pastry cutter to cut 24 discs from pastry. Line prepared pans with pastry discs and prick the bases with a fork. Bake for 10 mins or until light golden.

  2. Step 2

    Whisk the egg and cream in a jug. Season. Arrange salami, antipasto mix and basil in the pastry cases. Top with egg mixture and goat’s cheese. Bake for 12-15 mins or until just set.
