Apple and mixed berry pies

Ingredients

  • 4 sheets frozen shortcrust pastry, just thawed
  • 4 Granny Smith apples, peeled, cored, coarsely chopped
  • 1½ cups (225g) Coles Brand Fresh Frozen Mixed Berries
  • 1 orange, zested
  • ⅓ cup (75g) caster sugar
  • ¼ tsp cinnamon
  • 1 tbs cornflour
  • 1 Coles Brand Australian Free Range Egg, lightly beaten
  • Custard or vanilla ice cream, to serve

Method

  1. Step 1

    Preheat oven to 200°C. Lightly grease a 6-hole, ¾ cup (180ml) Texas muffin pan. Use a 15cm-diameter pastry cutter to cut six discs from half the pastry. Line the holes of the muffin pan with the pastry.
  2. Step 2

    Combine apples, berries, orange zest, sugar, cinnamon and cornflour in a bowl. Toss to combine.
  3. Step 3

    Spoon filling into pastry bases. Brush pastry edges with egg. Use a 10cm-diameter pastry cutter to cut six discs from the remaining pastry. Place on top of the filling. Press edges gently to seal and crimp with a fork. Decorate with excess pastry, if desired. Brush tops with the egg and sprinkle with extra sugar. Use a sharp knife to make 2 small cuts in the top of each pie to allow steam to escape. Bake in the oven for 35 mins or until pastry is crisp and golden, covering with foil if pastry is overbrowning.

    Serve the pies with custard.
