Apple and sultana crumble

Ingredients

  • 8 Granny Smith apples, peeled, cored, chopped
  • ⅓ cup (75g) caster sugar
  • ½ tsp ground cinnamon
  • 1 tsp grated lemon rind
  • ½ cup (80g) sultanas
  • 2 tsp plain flour
  • 1 cup (90g) rolled oats
  • ½ cup (75g) plain flour, extra
  • ½ cup (110g) firmly packed brown sugar
  • 80g chilled butter, chopped
  • ¼ cup (25g) chopped walnuts
  • Vanilla ice cream, to serve

Method

  1. Step 1

    Preheat oven to 180°C.
  2. Step 2

    Place apple, caster sugar, cinnamon, lemon rind, sultanas and 2 tbs water in a large saucepan over medium heat. Cook, covered, for 5 mins or until apple starts to soften. Add flour and cook, covered, for 3 mins or until apple is tender.

  3. Step 3

    Transfer apple mixture to a 6-cup (1.5L) baking dish. Place oats, extra flour, brown sugar and butter in a bowl. Use your fingertips to rub mixture into butter until mixture resembles coarse breadcrumbs. Stir in walnuts.
  4. Step 4

    Sprinkle apple mixture with crumble. Bake for 35 mins or until top is golden. Set aside for 5 mins to cool.
  5. Step 5

    Serve the crumble topped with whipped cream or ice cream.
