Ingredients

  • 1kg granny smith apples, peeled, cored, coarsely chopped
  • 2 tbs caster sugar
  • 1 tsp ground cinnamon
  • 5 sheets puff pastry, just thawed
  • 1 free-range egg, lightly whisked
  • 1 tbs milk
  • 300ml thickened cream
  • 1 tbs icing sugar mixture
  • Icing sugar mixture, to serve

Method

  1. Step 1

    Place apples in a medium saucepan with 1/3 cup (80ml) water. Bring to a boil over high heat. Cover and reduce heat to medium. Simmer for 5 mins or until apples are tender. Drain and discard liquid. Place apple in a medium bowl. Add the sugar and cinnamon and stir to combine. Set aside to cool.

  2. Step 2

    Preheat oven to 200°C. Line three large baking trays with baking paper. Cut each pastry sheet into quarters. Divide cooled apple mixture among pastry and fold a corner over to make a triangle. Use a fork to press the edges to seal. Place on the lined trays.

  3. Step 3

    Whisk the egg and milk together in a small bowl. Brush over pastries. Bake, swapping and turning trays halfway through cooking, for 25 mins or until golden and puffed.

  4. Step 4

    Meanwhile, use an electric mixer to whisk the cream and icing sugar until soft peaks form.

  5. Step 5

    Dust apple turnovers with icing sugar and serve with cream mixture.

Don’t wait until the pastry is fully thawed before handling it – it should be just thawed, instead of being floppy. To help the puff pastry cook well and puff up nicely, make sure the pastry is thawed according to the instructions on the packaging and not rolled out to be too thin. To prevent the pastry from getting burnt on the top or bottom, bake them on the middle oven rack. 

How do I prevent the filling from leaking? 

To minimise the chance of the filling leaking or leaky pastry cases in this apple turnovers recipe, place the assembled uncooked pastries in the fridge for 20 minutes on a chopping board lined with baking paper before baking them in the oven, and brush the pastry shells with egg wash to help prevent leaky fillings.
