Apricot-soy lamb chops


  • 2 tbs soy sauce
  • 1/4 cup (80g) apricot jam
  • 1 garlic clove, crushed
  • 2 tsp sesame oil
  • 8 Coles Australian Lamb Loin Chops
  • 1 bunch asparagus, trimmed
  • 120g pkt Coles 4 Leaf Salad Mix
  • 1 Lebanese cucumber, diagonally sliced

  1. Step 1

    Heat a lightly greased barbecue grill or chargrill on medium. Combine the soy sauce, jam, garlic and oil in a microwave-safe bowl. Brush lamb on one side with a little soy mixture.
  2. Step 2

    Cook the lamb, soy-side down, on the grill for 1-2 mins. Brush the other side of the lamb with a little of the remaining soy mixture. Turn the lamb and cook, basting occasionally, for 1-2 mins until golden brown and sticky or until cooked to your liking. Transfer to a plate and cover to keep warm.
  3. Step 3

    Cook the asparagus on the grill, turning, for 1-2 mins or until lightly charred. Drizzle with a little more soy mixture. Transfer to the plate with the lamb.
  4. Step 4

    Cook the remaining soy mixture in the microwave on high for 1-2 mins or until mixture comes to the boil.
  5. Step 5

    Place the asparagus, salad mix and cucumber in a large bowl. Toss to combine. Arrange the lamb and asparagus mixture on a serving platter. Drizzle lamb with soy mixture to serve.
