Shake up your dinner menu with this Asian-style baked snapper recipe. Flavour-packed and easy to make, it will be an all-time family favourite.

Ingredients

  • 1 red capsicum, seeded, thinly sliced
  • 4 Coles Australian Snapper Portions
  • 1/4 cup (60ml) soy sauce
  • 2 tbs mirin seasoning
  • 2 tsp finely grated ginger
  • 1 garlic clove, crushed
  • 1 tsp sesame oil
  • 1 bunch choy sum, halved
  • 2 spring onions, thinly sliced diagonally
  • 1/2 cup coriander sprigs
  • Lime wedges, to serve

Method

  1. Step 1

    Preheat oven to 200˚C. Line a large deep baking tray with baking paper.
  2. Step 2

    Arrange the capsicum over the lined tray. Top with the snapper.
  3. Step 3

    Combine the soy sauce, mirin, ginger, garlic and sesame oil in a small jug or bowl. Drizzle over snapper in tray. Bake for 12 mins or until snapper is almost cooked through. Add the choy sum to the tray. Bake for a further 3 mins or until the choy sum wilts and the snapper is cooked through.
  4. Step 4

    Sprinkle snapper with spring onion and coriander. 

    Serve with... lime wedges.
