We’ve put a zesty twist on the average nice cream. With avocado, lime and mint, this is a summer flavour combo you’ll want to try!

Ingredients

  • 6 large ripe avocados, stoned, peeled, coarsely chopped
  • 3 limes, juiced
  • 1/3 cup (80ml) Coles Sweetened Condensed Coconut Milk
  • 1 tbs chopped mint

Method

  1. Step 1

    Line a baking tray with baking paper. Arrange the avocado in a single layer on the lined tray. Place in the freezer for 6 hours or until the avocado is frozen.
  2. Step 2

    Place the frozen avocado, lime juice, condensed milk and mint in a food processor and process until smooth and creamy. Transfer the avocado mixture to a 6-cup (1.5L) metal container. Cover and place in the freezer for 30 mins to chill before serving.

    Serve with waffle cones and trail mix.
