Avocado and prawn cups

Ingredients

  • 12 wonton wrappers
  • 2 Hass avocados, stoned, peeled, chopped
  • 100g fetta, crumbled
  • 1/4 cup coriander leaves
  • 2 spring onions, chopped
  • 1 garlic clove, quartered
  • 1 lemon, zested, juiced
  • 24 Coles Deli Australian Cooked Black Tiger Prawns, peeled leaving tails intact, deveined
  • 1 tbs extra virgin olive oil
  • Thinly sliced spring onion, to serve
  • Coriander leaves, extra, to serve
  • Lemon halves or wedges, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Grease a 12-hole, 1/3 cup (80ml) muffin pan. Place 1 wonton wrapper on a clean work surface. Spray with a little olive oil spray and place in 1 prepared hole. Repeat with the remaining wonton wrappers. Bake for 10 mins or until crisp. Set aside to cool.
  2. Step 2

    Place the avocado, fetta, coriander, spring onion, garlic and 2 tsp lemon juice in a food processor and process until just combined. Season.
  3. Step 3

    Divide two-thirds of the avocado mixture among wonton wrappers. Top with prawns and remaining avocado mixture. Combine oil with the remaining lemon juice in a small bowl. Drizzle over the prawns. Sprinkle with spring onion, lemon zest and extra coriander. Season and serve with lemon halves or wedges.
