If you can’t go past a prawn cocktail, this prawn cocktail recipe is for you. Served in an avocado with a creamy dressing, it’s the perfect dish for a cocktail party.

Avocado, prawn and mango cocktail with dill dressing

Ingredients

  • 2 avocados, halved, stoned
  • 16 Coles Australian Cooked Whole Tiger Prawns (from the deli), peeled leaving tails intact, deveined
  • 2 mangoes, stoned, peeled, coarsely chopped

Dill dressing

  • 1/4 cup (60g) crème fraîche
  • 1 tbs chopped dill
  • 2 tbs lemon juice
  • 1 tsp finely grated lemon rind
  • 2 tsp Dijon mustard

Method

  1. Step 1

    Place avocado halves on a serving platter. Top with prawns and mango.
  2. Step 2

    To make dill dressing, whisk crème fraîche, dill, lemon juice, lemon rind and mustard in a small bowl. Season.
  3. Step 3

    Drizzle dressing over prawns and mango. Sprinkle with black pepper.
