Baked apple with chorizo stuffing

Ingredients

  • 4 Granny Smith apples
  • 2 tsp olive oil
  • 1 shallot, finely chopped
  • 1 chorizo, finely chopped
  • ⅔ cup (50g) fresh breadcrumbs
  • 1 tbs chopped sage
  • 2 tsp finely grated lemon rind
  • 60g fetta, crumbled

Method

  1. Step 1

    Preheat oven to 200°C. Cut the tops off the apples about 3cm from stem ends. Reserve apple tops. Using a small spoon, scoop out the apple cores leaving the bottoms intact.
  2. Step 2

    Heat the oil in a medium frying pan over medium heat. Add shallot and chorizo and cook, stirring, for 5 mins or until onion is tender. Add breadcrumbs, sage and lemon rind and cook, stirring, for 1 min or until well combined.
  3. Step 3

    Place apples in a medium baking dish, cut side up. Fill the apples with the chorizo mixture and sprinkle with fetta. Replace apple tops. Pour ½ cup water into base of the dish. Cover with foil. Bake for 30-35 mins or until apples are tender.
