Baked chorizo and chicken macaroni

Ingredients

  • 300g macaroni
  • 1 tbs olive oil
  • 1 chorizo, chopped
  • 1 red onion, finely chopped
  • 1 carrot, finely chopped
  • 2 celery sticks, finely chopped
  • 1 tbs plain flour
  • 1 cup (250ml) milk
  • 420g can Heinz Big Red Tomato Soup
  • 2 cups shredded cooked chicken
  • 2 cups (200g) shredded pizza cheese
  • 1/3 cup (25g) panko breadcrumbs
  • Mixed salad leaves, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Cook macaroni in a saucepan of boiling water following packet directions or until al dente. Drain.

  2. Step 2

    Meanwhile, heat oil in a large frying pan over medium heat. Add chorizo and cook, stirring, for 5 mins or until golden. Add onion, carrot and celery and cook for 5 mins or until softened. Season.

  3. Step 3

    Add flour and stir to coat vegetable mixture well. Reduce heat to low. Gradually add milk, stirring to remove lumps. Stir in the soup. Bring to a simmer, then remove from heat.

  4. Step 4

    Stir in macaroni, chicken and half the cheese. Transfer to a greased 8-cup (2L) casserole dish. Sprinkle with breadcrumbs and remaining cheese. Bake for 20-25 mins or until golden. Serve with salad leaves.
