Ingredients

  • 2 x 200g punnets red perino tomatoes
  • 2 shallots, coarsely chopped
  • 4 garlic cloves, thinly sliced
  • 2 tbs olive oil
  • 200g block fetta
  • 375g penne
  • 60g baby spinach, torn
  • 2 tbs fresh oregano leaves
  • 1/2 tsp chilli flakes (optional)
  • Lemon wedges, oregano and chilli flakes, to serve

Method

  1. Step 1

    Preheat oven to 200°C. Combine the tomato, shallot, garlic and 1 tbs of the oil in a 3.5L (14-cup) ovenproof dish. Season.

  2. Step 2

    Roast for 20 mins or until the tomato begins to wilt. Place the block of fetta in the centre of the tomato mixture. Drizzle with remaining oil. Bake for a further 20 mins or until fetta softens.

  3. Step 3

    Meanwhile, cook the pasta in a large saucepan of boiling salted water following packet directions or until al dente. Drain, reserving 1/2 cup (125ml) of the cooking water.

  4. Step 4

    Use a fork to coarsely mash the soft fetta in the oven dish. Add the spinach, oregano, chilli flakes, pasta and reserved cooking water. Gently stir mixture to combine. Season.

  5. Step 5

    Serve baked fetta pasta with oregano, lemon wedges and chilli flakes.

The hero of this baked pasta recipe is the tomato and fetta sauce. To make it at home, you’ll need pantry staples like pasta (we use penne) and olive oil, as well as fresh ingredients like a block of fetta cheese, tomatoes, shallots, garlic, baby spinach, lemon and some herbs. Begin by roasting the tomatoes, shallots and garlic with olive oil in the oven until the tomatoes start to soften. Add an entire block of fetta to the centre of the tomatoes and continue baking. After a further 20 minutes, the fetta should be soft enough to mash with a fork. Gently stir to combine with the tomatoes before adding cooked pasta, spinach, herbs and a splash of pasta water.
