We’re taking gnocchi to a whole new level with our quick and delicious baked gnocchi boscaiola recipe.

Baked gnocchi boscaiola

Ingredients

  • 500g pkt fresh gnocchi
  • 3 tsp olive oil
  • 1 brown onion, finely chopped
  • 200g short-cut bacon, coarsely chopped
  • 300g cup mushrooms, thinly sliced
  • 1 garlic clove, crushed
  • ½ cup (125ml) white wine
  • 1 cup (250ml) Bulla Cooking Cream
  • ½ cup (120g) sour cream
  • 50g baby kale salad mix
  • 1 cup (70g) fresh breadcrumbs (made from day-old bread)
  • 1 cup (100g) Perfect Italiano Perfect Bakes cheese
  • 2 tbs finely chopped flat-leaf parsley
  • Crusty bread, to serve
  • Mixed salad leaves, to serve

Method

  1. Step 1

    Preheat oven to 200°C. Grease a 12-cup (3L) baking dish. Cook the gnocchi following packet directions or until tender. Drain well.
  2. Step 2

    Meanwhile, heat the oil in a large frying pan over medium heat. Cook the onion and bacon, stirring, for 5 mins until the onion softens.
  3. Step 3

    Add the mushroom and garlic to the onion mixture. Cook for 5 mins or until mushroom is browned. Add the wine and cook for 2-3 mins or until liquid is almost evaporated. Stir in the cream and sour cream. Simmer for 5 mins or until the sauce thickens slightly. Stir in the kale and gnocchi. Spoon into the prepared dish.
  4. Step 4

    Combine the breadcrumbs, cheese and parsley in a small bowl. Sprinkle evenly over the gnocchi mixture. Bake for 15 mins or until golden brown and heated through. Serve with crusty bread and salad leaves.
