Balsamic and orange roast chicken

Served with a fresh and tangy salad, this is an easy dish that’s perfect for entertaining.

Ingredients

  • 2 oranges, zested, juiced
  • 2 tbsp balsamic vinegar
  • 2 tbsp brown sugar
  • 2.4kg Coles RSPCA Approved Extra Large Whole Chicken
  • 2 sprigs rosemary
  • 2½ oranges, extra
  • 1 tbsp extra virgin olive oil
  • 100g rocket leaves
  • 60g fetta, crumbled
  • Crusty bread, to serve

Method

  1. Step 1

    Preheat oven to 190°C. Place orange zest, orange juice, vinegar and sugar in a small saucepan over low heat. Cook, stirring, for 2-3 mins or until sugar dissolves. Increase heat to medium and bring to a simmer. Simmer for 10 mins or until the glaze reduces and thickens slightly.
  2. Step 2

    Place chicken on a rack in a large roasting pan. Place the rosemary and orange half into the cavity. Season chicken. Tie legs together with kitchen string. Brush chicken with glaze. Pour 1 1/2 cups (375ml) water into roasting pan. Roast for 1 hour 20 mins, brushing chicken with more glaze 3 times during cooking and covering with foil if necessary to prevent overbrowning, until chicken is cooked through and juices run clear when the thickest part of the thigh is pierced with a skewer. Transfer the chicken to a plate and cover with foil. Set aside for 10 mins to rest.
  3. Step 3

    Meanwhile, segment the remaining oranges over a bowl, reserving 2 tbsp of the juice. Arrange orange segments and rocket in a serving dish. Add the oil to the reserved orange juice in the bowl and whisk to combine. Season. Pour dressing over the rocket and orange, tossing to combine. Sprinkle with fetta.

    Serve chicken with rocket and orange salad and crusty bread.
