This banana chia pudding is divine. It requires only a handful of ingredients, and best of all, you can enjoy it in 3 hours, or prepare it in advance for a delicious breakfast.

  • ⅓ cup (70g) white chia seeds
  • 1 banana, mashed
  • 400ml can light coconut milk
  • 2 tbs maple syrup
  • Banana, chopped, extra
  • Maple syrup, extra, to serve

  1. Step 1

    Combine the chia seeds, banana, coconut milk and maple syrup in a bowl. Cover and place in the fridge for 3 hours or until the mixture thickens.
  2. Step 2

    Divide among serving glasses. Top with extra banana and drizzle with extra maple syrup to serve.
