Barbecue beef and corn salad

Ingredients

  • 1/2 x 25g pkt Coles Smokey BBQ Seasoning
  • 300g pkt Coles GRAZE Grass Fed Beef Rump Steak
  • 2 corn cobs, husks and silk removed
  • 350g pkt Coles Kitchen Green Goddess Salad Kit
  • 1/4 cup (70g) Greek-style yoghurt

Method

  1. Step 1

    Rub seasoning all over the beef. Place the corn on a microwave-safe plate and cover. Cook in microwave on high for 2 mins or until kernels start to soften.

  2. Step 2

    Heat a chargrill on high. Cook the corn, turning, for 5 mins or until charred. Cook beef on the grill for 3-4 mins each side for medium or until cooked to your liking. Set aside for 5 mins to rest. Thinly slice the beef. Use a serrated knife to cut down the sides of the corn to remove the kernels. Place in a bowl with the beef and salad mix and toss to combine.

  3. Step 3

    Combine yoghurt and dressing from the salad kit in a bowl. Drizzle over salad. Sprinkle with almonds from the salad kit.

Use it up:
A great way to use up leftover barbecue seasoning is to sprinkle it over the corn for extra flavour before grilling, or toast it before stirring into dips for an irresistibly smoky boost.
