The ultimate party starter, these barbecued prawns with spicy salsa take just 15 minutes to prepare.

Ingredients

  • 2 ripe mangoes, stoned, peeled, chopped
  • 1/2 small red onion, finely chopped
  • 1 long red chilli, seeded, finely chopped
  • 2 tbs chopped mint
  • 2 tbs chopped coriander
  • 1 1/2 tbs white wine vinegar
  • 2 tbs extra virgin olive oil
  • 16 Coles Australian Raw King Prawns, peeled leaving tails intact, deveined
  • 1/4 iceberg lettuce, shredded
  • 1 avocado, stoned, peeled, coarsely chopped
  • Mint leaves, to serve

Method

  1. Step 1

    Combine the mango, onion, chilli, mint, coriander, vinegar and half the oil in a medium bowl. Season.
  2. Step 2

    Place the prawns and the remaining oil in a bowl. Season. Toss to coat.
  3. Step 3

    Heat a barbecue grill or chargrill on high. Cook the prawns for 2 mins each side or until the prawns curl and change colour.
  4. Step 4

    Arrange the lettuce on a large serving platter. Top with the mango salsa, prawns and avocado. Top with mint leaves to serve.
