BBQ steaks with air fryer potato and greens

Served with crispy air fryer potatoes, this BBQ steak recipe is a delicious step up from your usual meat and veg.

Ingredients

  • 2 tbs Worcestershire sauce
  • 1 tbs red wine vinegar
  • 2 tbs finely chopped oregano
  • 1 tsp Dijon mustard
  • 3 garlic cloves, crushed
  • 4 Drovers Choice 100% Australian Beef Rump Steaks
  • 3 potatoes
  • 2 tbs olive oil
  • 1/2 tsp smoked paprika
  • 1 bunch baby broccoli
  • 1/4 cup (20g) flaked almonds
  • Oregano leaves, to serve

Method

  1. Step 1

    Whisk the Worcestershire sauce, vinegar, chopped oregano, mustard and half the garlic in a jug to combine. Place the beef in a shallow dish and pour over half the Worcestershire sauce mixture. Turn the beef to coat. Place in the fridge for 1-2 hours to develop the flavours.
  2. Step 2

    Place the potatoes in a large saucepan and cover with water. Bring to the boil over high heat. Partially cover and reduce heat to medium-high. Cook for 10 mins or until just tender. Drain well. Set aside to cool slightly. Thickly slice.
  3. Step 3

    Preheat air fryer to 200 ̊C. Combine the oil, paprika and the remaining garlic in a small bowl. Season. Place the potato and half the oil mixture in a bowl and toss to coat. Arrange the potato mixture in a single layer in the basket of the air fryer and cook for 15 mins.
  4. Step 4

    Combine the broccoli and remaining oil mixture in a bowl and toss to coat. Turn the potato and arrange broccoli over the potato in the basket of the air fryer. Cook for 5 mins. Sprinkle broccoli with the almonds. Cook a further 3-4 mins or until the broccoli is lightly charred and the potato is crisp and light golden.
  5. Step 5

    Meanwhile, heat a chargrill on medium-high. Cook the beef for 3-4 mins each side for medium or until cooked to your liking. Place the remaining Worcestershire sauce mixture in a small saucepan over high heat. Bring to the boil. Remove from heat.
  6. Step 6

    Divide the beef and potato mixture among serving plates. Drizzle with the remaining Worcestershire sauce mixture and sprinkle with oregano leaves. Season with pepper to serve.


Recipe tip

In the oven: If you don’t have an air fryer, roast the potatoes in the oven at 200 ̊C for 30 mins, adding the broccoli for the last 10 mins and the almonds for the last 5 mins of cooking.
