Bean and vegetable soup

Ingredients

  • 1 tbs olive oil
  • 1 brown onion, coarsely chopped
  • 2 garlic cloves, crushed
  • 1 carrot, coarsely chopped
  • 2 x 420g cans Coles 4 Bean Mix, rinsed, drained
  • 410g can Coles Whole Baby Potatoes, rinsed, drained, coarsely chopped
  • 4 cups (1L) vegetable stock
  • 1/2 tsp dried thyme
  • 1 Coles Bakery Super Sub Roll

Method

  1. Step 1

    Heat the oil in a large saucepan over medium heat. Add the onion, garlic and carrot and cook, stirring, for 5 mins or until onion softens.

  2. Step 2

    Add the beans, potato, stock, thyme and 2 cups (500ml) water. Bring to the boil. Reduce heat to low and simmer, uncovered, for 5 mins or until vegetables are tender.

  3. Step 3

    Divide soup among serving bowls and serve with bread.
