Beef and Beetroot Burger with Grilled Pumpkin


  • 500g Coles Australian 3 Star Beef Mince
  • 1 small beetroot, peeled, coarsely grated
  • 100g haloumi, coarsely grated
  • 1 garlic clove, crushed
  • 4 tasty cheddar slices
  • 150g butternut pumpkin, seeded, peeled, thinly sliced crossways
  • Olive oil spray
  • 4 Coles Brioche Burger Buns, split
  • 1/3 cup (80g) aïoli
  • 60g pkt Coles Australian Baby Rocket
  • 12 pickled cucumber slices

  1. Step 1

    Combine mince, beetroot, haloumi and garlic in a bowl. Season. Shape the mince mixture into 4 even patties.
  2. Step 2

    Heat a large non-stick frying pan over medium heat. Cook the patties for 5 mins each side or until browned and cooked through. Top patties with cheddar and cook for a further 1 min or until cheddar melts.
  3. Step 3

    Meanwhile, heat a barbecue grill or chargrill on medium-high heat. Spray the pumpkin with oil. Cook on grill for 3 mins each side or until pumpkin is charred and tender. Add buns to grill, cut-side down, and cook for 1 min or until toasted.
  4. Step 4

    Divide the bun bases among serving plates. Spread with aioli and top with rocket, pumpkin, patties and cucumber. Sandwich with remaining roll tops and serve immediately.
