Beef and caramelised onion sausage rolls recipe

Ingredients

  • 1 tbsp olive oil
  • 2 brown onions, thinly sliced
  • 2 tbsp brown sugar
  • 1 tbsp white wine vinegar
  • 500g Coles Australian 4 Star Beef Mince
  • 1 Coles Brand Australian Free Range Egg, lightly whisked
  • 2/3 cup (70g) packaged breadcrumbs
  • 1 tbsp thyme leaves, plus extra to garnish
  • 1 tbsp tomato sauce
  • 2 sheets ready-rolled puff pastry, just thawed
  • 1 Coles Brand Australian Free Range Egg, extra, lightly whisked
  • 1/4 cup (20g) flaked almonds
  • Mixed salad leaves, to serve
  • Tomato sauce, extra, to serve

Method

  1. Step 1

    Preheat oven to 220°C. Line a large baking tray with baking paper.
  2. Step 2

    Heat oil in a medium frying pan over medium heat. Add onion. Cook, stirring occasionally, for 10 mins or until browned. Add sugar and vinegar. Cook, stirring occasionally, for 3 mins or until onions are caramelised. Set aside for 5 mins to cool.
  3. Step 3

    Place onion mixture in a large bowl. Add mince, egg, breadcrumbs, thyme and tomato sauce. Season. Using your hands, mix to combine.
  4. Step 4

    Cut each pastry sheet in half to form 2 rectangles. Place one-quarter of the beef mixture along one long side of each rectangle. Roll pastry to enclose filling. Cut each roll into 3 pieces diagonally. Place on the prepared tray. Brush with egg and sprinkle with almonds and extra thyme. Bake for 20-25 mins or until pastry is golden and filling is cooked through.

    Serve with salad and extra tomato sauce.
