Ingredients

  • 250g risoni
  • 420g pkt Coles GRAZE Grass Fed Beef Meatballs
  • 150g haloumi, cut into 3cm pieces
  • 3/4 cup flat-leaf parsley
  • 280g Coles Mixed Chargrilled Peppers (capsicum), chopped, 2 tbs oil reserved

Method

  1. Step 1

    Cook the risoni following packet directions or until al dente. Drain. Thread meatballs and haloumi onto 4 metal or soaked bamboo skewers. Spray with olive oil spray. Place on a baking tray.

  2. Step 2

    Preheat grill on high. Cook skewers under the grill, turning occasionally, for 10-12 mins or until golden and cooked through. Chop two-thirds of the parsley.

  3. Step 3

    Combine risoni, chopped parsley, capsicum and reserved oil in a bowl. Divide the risoni mixture among serving plates. Top with skewers and remaining parsley to serve.
