Ingredients

  • 1 tbs peanut oil
  • 500g Coles GRAZE Grass Fed Beef Rump Steak, thinly sliced
  • 2 tsp sesame oil
  • 1 red onion, cut into wedges
  • 4cm-piece ginger, cut into matchsticks
  • 2 garlic cloves, thinly sliced
  • 2 x 150g pkts Coles Australian Mixed Exotic Mushrooms, sliced
  • 2 bunches pak choy, cut into wedges
  • 1/4 cup (60ml) oyster sauce
  • 2 tbs XO mushroom sauce
  • 1 tbs soy sauce
  • 1/2 cup (75g) toasted cashews
  • Steamed jasmine rice, to serve
  • Toasted sesame seeds, to serve
  • Spring onion curls, to serve

Method

  1. Step 1

    Heat the peanut oil in a wok or large frying pan over high heat. Add one-quarter of the beef and stir-fry for 2-3 mins or until golden brown. Transfer the beef to a heatproof bowl. Repeat, in 3 more batches, with the remaining beef.

  2. Step 2

    Add the sesame oil to the wok or pan with the onion, ginger and garlic and stir-fry for 1 min or until just tender. Add the mushroom and stir-fry for 2 mins or until mushroom is just tender.

  3. Step 3

    Return the beef to the wok or pan with the pak choy, oyster sauce, mushroom sauce and soy sauce and stir-fry for 3-4 mins or until sauce boils and thickens and pak choy is just tender. Stir in the cashews.

  4. Step 4

    Divide the rice and stir-fry among serving bowls. Sprinkle with sesame seeds and spring onion to serve.
