These beef brisket & scambled egg breakfast burritos are the ultimate morning upgrade. Tender brisket, fluffy scrambled eggs, and your favourite fillings are wrapped in a warm tortilla to create a handheld feast that will fuel your day.

Ingredients

  • 1 tbs olive oil
  • 2 cups (60g) kale & baby spinach leaves or baby spinach leaves
  • 4 eggs, lightly whisked
  • 4 Coles Soft White Wraps, warmed
  • Beef and bean mixture, warmed
  • 50g Coles Danish Style Fetta, crumbled

Method

  1. Step 1

    Heat half the oil in a large non-stick frying pan over medium heat. Add the kale and spinach and cook for 2-3 mins or until just wilted. Transfer the kale and spinach to a plate.

  2. Step 2

    Season the egg. Wipe the pan clean. Heat the remaining oil in the pan over low heat. Add the egg and swirl to coat the base of the pan. Cook, without stirring, for 1 min or until the egg begins to set. Cook, pushing and folding with a straight-edged wooden spoon every 10 secs, for 2-3 mins or until the egg is almost set.

  3. Step 3

    Divide the wraps among serving plates. Top with the kale and spinach, beef mixture, egg and fetta. Roll up to enclose filling and serve.

Recipe tip

Smart swap: Instead of eggs, you can scramble 300g silken tofu for 2-3 mins over medium heat or until heated through.
