Heat half the oil in a large non-stick frying pan over medium heat. Add the kale and spinach and cook for 2-3 mins or until just wilted. Transfer the kale and spinach to a plate.
Season the egg. Wipe the pan clean. Heat the remaining oil in the pan over low heat. Add the egg and swirl to coat the base of the pan.
