Beef burger with fresh tomato salsa and cucumber

Quick, tasty and easy, these beef burgers tick all the right boxes.

Ingredients

  • 500g pkt Coles Beef Thyme & Parsley Burgers
  • 4 Coles Australian Tasty Light Cheddar Slices
  • 2 vine-ripened tomatoes, finely chopped
  • 1/2 red onion, finely chopped
  • 1 tsp olive oil
  • 4 Coles Bakery Multigrain Bread Rolls, split, toasted
  • 60g pkt Coles Australian Baby Rocket
  • 8 drained canned beetroot slices
  • Halved dill cucumbers, to serve (optional)

Method

  1. Step 1

    Heat a chargrill on medium-high. Cook the burger patties for 4-5 mins each side or until just cooked through. Top each patty with a slice of cheese. Cook, without turning, for 1-2 mins or until the cheese begins to melt.
  2. Step 2

    Meanwhile, combine the tomato, onion and oil in a small bowl. Season.
  3. Step 3

    Divide the roll bases among serving plates. Top with rocket, beetroot and burger patties. Spoon over the tomato mixture and top with roll tops. Serve immediately with cucumber, if using.
