Beef cashew and baby broccoli stir-fry

Whip up dinner in next to no time with our quick and tasty Beef, Cashew and Baby Broccoli Stir-Fry recipe.

  • ¼ cup (60ml) sweet chilli sauce
  • 2 tbs sweet soy sauce
  • 2 tbs oyster sauce
  • 2 tbs peanut oil
  • 600g Coles Australian No Added Hormones Beef Rump Steak, thinly sliced
  • 1 large red onion, cut into thin wedges
  • 3 garlic cloves, crushed
  • 1 bunch baby broccoli, cut into 5cm lengths
  • 450g pkt microwavable jasmine rice
  • 100g snow peas, trimmed
  • ¾ cup (120g) cashews, toasted, chopped

  1. Step 1

    Combine the sweet chilli sauce, soy sauce and oyster sauce in a small jug.
  2. Step 2

    Heat 2 tsp of the oil in a wok or large frying pan over high heat. Stir-fry half the beef for 2-3 mins or until brown. Transfer to a bowl. Repeat with 2 tsp of the oil and remaining beef. Wipe the wok or pan clean.
  3. Step 3

    Heat the remaining oil in the wok or pan. Add the onion. Stir-fry for 2 mins. Add the garlic and broccoli. Stir-fry for 2 mins or until just tender.
  4. Step 4

    Meanwhile, heat the rice following packet directions.
  5. Step 5

    Return the beef to the wok or pan with the snow peas, cashew and soy sauce mixture. Stir-fry for 1-2 mins or until heated through and well combined. Serve with the rice.
