Beef kebabs with Mediterranean-style quinoa

Ingredients

  • 450g pkt Coles Australian Beef Kebabs
  • 1 cup (200g) quinoa
  • 600g pkt Birds Eye Seasoned Sides Mediterranean Mix
  • 130g pkt Coles Deli Mediterranean Olives
  • 60g baby spinach leaves

Method

  1. Step 1

    Preheat oven to 200°C. Line a baking tray with baking paper.

  2. Step 2

    Heat a large frying pan or barbecue flatplate over medium-high heat. Cook kebabs, turning occasionally, for 18 -20 mins or until golden and cooked through. Set aside for 5 mins to rest.

  3. Step 3

    Meanwhile, place the quinoa and 11/2 cups (375ml) water in a large saucepan. Place over high heat and bring to the boil. Reduce heat to low. Cover and cook for 15 mins or until liquid is absorbed. Remove from heat. Cover and set aside for 10 mins to steam.

  4. Step 4

    Meanwhile, place vegetables over the lined tray. Bake for 15 -20 mins or until golden and heated through. 

     

  5. Step 5

    Combine quinoa, vegetables, olives and spinach in a large bowl and toss to combine.

  6. Step 6

    Serve quinoa mixture with kebabs.
