Ingredients

  • 500g pkt Coles One Pot Beef Madras
  • 2 tbs vegetable oil
  • 1 brown onion, chopped
  • 400g can diced tomatoes
  • 4 tortillas
  • 250g pkt microwavable basmati rice
  • 1/2 cup shredded red cabbage
  • 1/3 cup (95g) Greek-style yoghurt
  • 1/4 cup coriander sprigs
  • 1 long red chilli, thinly sliced (optional)

Method

  1. Step 1

    Preheat oven to 200°C. Heat a large heavy-based saucepan over medium heat. Add the beef mixture and cook, stirring, for 3-5 mins or until browned. Add the onion and cook, stirring, for 2 mins or until onion softens. Add the tomato and 2 cups (500ml) water. Bring to the boil. Reduce heat to medium-low and cook, stirring occasionally, for 1 1/2 hours or until beef is tender and sauce thickens.
  2. Step 2

    Meanwhile, line a baking tray with baking paper. Place the tortillas in a single layer on the lined tray. Spray with olive oil spray. Bake, turning once, for 6-8 mins or until light golden.
  3. Step 3

    Heat the rice following packet directions.
  4. Step 4

    Place tortillas on serving plates. Top with rice, beef mixture, cabbage, yoghurt, coriander and chilli, if using. Season.
