Beef ravioli with bacon and asparagus

This beef ravioli with bacon and asparagus is an easy winner. From pan to plate in just 20 minutes, it’s as quick as it is delicious.

Ingredients

  • 4 bacon rashers, rind removed, thinly sliced
  • 40g butter, chopped
  • 2 bunches asparagus, woody ends trimmed, chopped
  • 2 garlic cloves, thinly sliced
  • 600g pkt Coles Beef Ravioli
  • 1 tbs lemon juice
  • 2 tbs olive oil
  • 1/3 cup (35g) finely grated parmesan
  • 1/2 cup basil leaves

Method

  1. Step 1

    Heat a large non-stick frying pan over medium-high heat. Add the bacon and cook, stirring, for 3-4 mins or until crisp. Add the butter, asparagus and garlic. Cook, stirring, for 2-3 mins or until asparagus is just tender and the butter is a nutty brown.
  2. Step 2

    Meanwhile, cook the pasta in a large saucepan of boiling water following packet directions. Drain, reserving 1/4 cup (60ml) of the cooking liquid.
  3. Step 3

    Add the pasta, lemon juice, oil and reserved cooking liquid to the bacon mixture in the frying pan. Cook, stirring, for 2 mins or until heated through.
  4. Step 4

    Sprinkle the pasta mixture with parmesan and basil. Season with pepper to serve.
