Beetroot hommus

Ingredients

  • 400g can chickpeas, rinsed, drained
  • 250g Coles Australian Baby Beetroot, drained, chopped
  • 1/4 cup (70g) Greek-style yoghurt
  • 2 tbs tahini
  • 1/4 cup (60ml) lemon juice
  • 1 garlic clove, quartered
  • 2 tsp Moroccan spice mix
  • 1/3 cup (80ml) Coles Classic Olive Oil
  • Greek-style yoghurt, extra, to serve
  • Chopped pistachios, to serve

Method

  1. Step 1

    Place the chickpeas, beetroot, yoghurt, tahini, lemon juice, garlic, spice mix and oil in a food processor and process until smooth and well combined. Season.
  2. Step 2

    Transfer the chickpea mixture to a serving bowl. Top with extra yoghurt and sprinkle with pistachio to serve.
