Ingredients

  • 1 cup (150g) self-raising flour
  • 2 tbs caster sugar
  • 1 cup (250ml) milk
  • 1 free-range egg, lightly whisked
  • 1 banana, mashed
  • 1 passionfruit, halved
  • 1 cup (150g) mixed berries, crushed

Method

  1. Step 1

    Preheat oven to 180°C. Grease a 16cm x 26cm slice pan and line with baking paper, allowing the sides to overhang.

  2. Step 2

    Whisk flour and sugar in a medium bowl.

  3. Step 3

    Whisk milk, egg, banana and passionfruit pulp in a small jug. Add milk mixture to flour mixture in batches, stirring well after each addition, until smooth.

  4. Step 4

    Pour into the prepared pan. Top with spoonfuls of mixed berries and use a butter knife to swirl the berries through the mixture.

  5. Step 5

    Bake for 15 mins or until golden. Set aside in the pan to cool completely. Cut into pieces.
