Ingredients

  • 1 1/2 cups (225g) plain flour
  • 3/4 cup (105g) self-raising flour
  • 1/2 cup (110g) brown sugar
  • 1/2 cup (110g) caster sugar
  • 1 tsp ground cinnamon
  • 185g butter, cut into 1cm pieces 
  • 1 cup (90g) rolled oats
  • 1 free-range egg
  • 300g frozen mixed berries
  • 1/4 cup (55g) caster sugar
  • 1 1/2 tbs cornflour

Method

  1. Step 1

    Preheat oven to 180°C. Grease a 20cm x 30cm slice pan and line the base and sides with baking paper, allowing the sides to overhang. Place combined flour, combined sugar and the cinnamon in a food processor. Add the butter and process until the mixture is crumbly. Add the oats and egg and pulse for 10 secs or until the mixture is just combined. Spoon two-thirds of the oat mixture into the prepared pan and use the back of a spoon to press down evenly. Bake for 15 mins or until golden. Set aside for 5 mins to cool.

  2. Step 2

    Place the berries, sugar and cornflour in a large bowl and toss to combine. Spoon the filling evenly over the base in the pan and sprinkle the remaining oat mixture evenly over the berries.

  3. Step 3

    Bake for 25-30 mins or until the top is golden. Set aside in the pan to cool completely. Cut into pieces to serve.
