Ingredients

  • 500g vanilla ice-cream, softened
  • 1⅔ cup (250g) frozen mixed berries
  • 2 tsp caster sugar
  • 2 tsp lemon juice
  • 2 tsp cornflour
  • 3 sheets frozen ready-rolled shortcrust pastry, just thawed
  • 1 Coles Australian Free Range Egg, lightly whisked
  • 2 tsp caster sugar, extra

Method

  1. Step 1

    Place the ice-cream in a large bowl. Add 1 cup (150g) of the berries and gently fold until combined. Spoon into a 7cm x 13cm loaf pan. Cover and place in the freezer until firm.
  2. Step 2

    Preheat oven to 180°C. Grease 2 large baking trays. Combine the sugar, lemon juice, cornflour and remaining berries in a small bowl.
  3. Step 3

    Place the pastry on a clean work surface. Use a 7.5cm pastry cutter to cut 24 discs from the pastry. Reserve 8 pastry discs. Divide the berry mixture in the bowl evenly among half the remaining pastry discs. Top with remaining pastry rounds. Use a fork to press the edges together to enclose the filling and prick holes in the top. Transfer to 1 prepared tray. Brush with a little egg and sprinkle with half the extra sugar.
  4. Step 4

    Place reserved pastry discs on remaining prepared tray. Use a fork to mark edges. Brush with a little egg and sprinkle with remaining extra sugar. Bake the pies and pastry discs for 20 mins or until golden. Set aside on the trays to cool.
  5. Step 5

    Top each pastry disc with a scoop of ice-cream and a berry pie.
