Need a cracking side dish? Give this best-ever sweet potato mash recipe a go. Flavoured with fresh thyme and maple syrup, each mouthful is silky smooth and delicious. All done in 10 minutes, it’s an easy option when you’re short on time.

Ingredients

  • 6 small Gold sweet potatoes
  • 40g butter, chopped
  • ⅓ cup (80ml) cream
  • 2 tsp thyme leaves, plus extra to serve
  • 1 tbsp maple syrup, plus extra to serve
  • 20g butter, extra, melted

Method

  1. Step 1

    Preheat oven to 200C. Pierce sweet potatoes several times with a fork. Wrap individually in foil. Place on a baking tray. Bake for 1 hr or until tender. Set aside to cool for 15 mins. Carefully unwrap foil. Cut in half. Use a spoon to scoop out the flesh and place in a large bowl. Discard skin.
  2. Step 2

    Place the butter, cream and thyme in a microwave-safe jug. Microwave on high for 1 min or until butter has melted. Strain mixture over the sweet potato. Add the maple syrup and mash until smooth. Season. Serve the mash drizzled with extra butter.
