This muesli slice recipe is perfect for picnics, an on-the-go brekkie, or a morning or afternoon snack. It’s vegan, too.

Bircher muesli slice

Ingredients

  • 400g fresh dates, pitted, chopped
  • 1/2 cup (125ml) apple juice
  • 1 tbs pure maple syrup
  • 1 tsp ground cinnamon
  • 180g pkt Coles Organic Trail Mix or Coles Fruit & Nut Trail Mix
  • 3 cups (270g) rolled oats
  • 1/2 cup (50g) dried apple pieces
  • 2 tbs dried blueberries
  • 2 tbs dried cranberries

Method

  1. Step 1

    Grease a 16cm x 26cm slice pan (base measurement) and line with baking paper, allowing the sides to overhang. Place the date, juice, maple syrup and cinnamon in a food processor and process until creamy and well combined. Add the trail mix and 2 cups (180g) oats. Process, stopping the machine and scraping down the sides occasionally, for 1-2 mins or until well combined.

  2. Step 2

    Transfer the date mixture to a large bowl. Add the remaining oats and stir until well combined. Spoon into the prepared pan and use clean hands to press the mixture evenly over the base of the pan. Sprinkle with the apple, blueberries and cranberries, pressing lightly into the mixture. 

  3. Step 3

    Place in the fridge for at least 6 hours or overnight until firm. Cut into pieces to serve. Store in airtight container in the fridge for up to 1 week.
