Blinis

Ingredients

  • 2/3 cup (160ml) milk
  • 1 free-range egg
  • 1 cup (150g) plain flour
  • 3 tsp baking powder
  • 1/2 tsp salt

Avocado & corn

  • 1 avocado, stoned, peeled, mashed
  • 1 tsp lemon juice
  • Pinch ground red chilli (optional)
  • 1/4 cup (50g) canned corn kernels
  • 3 red perino tomatoes, sliced

Smoked trout & cucumber

  • 1/4 cup (60g) sour cream
  • 100g smoked trout
  • 6 slices Lebanese cucumber, quartered
  • Black lumpfish caviar, to serve (optional)

Pastrami & pickle

  • 1/4 cup (60g) sour cream
  • 2 tsp Dijon mustard
  • 80g pastrami slices
  • 3 cornichons, sliced
  • Dill sprigs, to serve

Method

  1. Step 1

    Combine the milk and egg in a small bowl and whisk to combine.

  2. Step 2

    Sift the flour, baking powder and salt in a large bowl. Make a well in the centre and add the milk mixture and whisk to form a smooth batter.

  3. Step 3

    Heat a large, lightly oiled frying pan over medium heat. Spoon five 1 tbs portions of batter

    around the pan, allowing room for spreading. Cook for 2 mins each side or until golden and

    cooked through. Repeat with remaining batter.

     

  4. Step 4

    To make avocado and corn blini, combine the avocado, lemon juice and chilli in a small bowl. Season. Spoon evenly among six of the blini. Top with corn and tomato.

  5. Step 5

    To make smoked trout and cucumber blini, divide sour cream among six blini. Top with trout, cucumber and caviar.

  6. Step 6

    To make pastrami and pickle blini, combine sour cream and mustard in a small bowl. Divide among the remaining blini. Top with pastrami, pickles and dill.

  7. Step 7

    Place the combined blini on a serving platter to serve.

  • You can also use raw corn kernels trimmed off the cob if the corn is fresh or blanch them in boiling water if preferred.

Blini vs pancake: what is blini made of?

Reminiscent of a pikelet or mini pancakes with a golden exterior and fluffy insides, these moreish canapes can be served with sweet or savoury toppings, and are ideal for your next dinner party. 

Pronounced ‘bli-nee’, they originate from Russia with roots across Eastern Europe in Slavic cuisine and are sometimes referred to as Russian pancakes or blini Russian pancakes. Serve them as finger food with your favourite toppings to guests, with smoked salmon alongside other high tea favourites for a Mother’s Day event, or as a base for a sweet dessert with fresh cream and berries.

Tips for making this blini recipe at home

While you can purchase pre-made blini pancakes, it’s simple to make these from scratch. Made from budget-friendly staple ingredients you’re likely to already have at home, there are a few tips you should know on how to make blinis. 

When preparing the batter for your blinis recipe, use a whisk to ensure the ingredients are well-combined and lump-free. Sift the flour before adding it to the mixture, as this will result in lighter and fluffier pancakes. The goal is a smooth batter, so you may need to adjust the thickness by adding a splash of more milk to achieve the correct consistency. 

When it’s time to cook, make sure you coat your frying pan with enough oil and evenly spoon portions of batter around the pan to account for any spreading. You’ll only need to cook them for 2 minutes on each side on medium heat – any longer and this can cause them to burn, and any shorter and the centre could be raw. 

What are the best toppings for blinis?
